**This is a fabulous cucumber salad from my old blog but it is worthy to be filed here.**

I have the best salad that’s only 33 calories per cup!  Yes!  Seriously, I make a batch of this up and have some all week if I can keep the kids out of it. I am in love with this salad and honestly it needs a day or two to really marinate and get good.  Yum…..I might have to go get a bowl as I type!

This salad gives you a quick side vegetable option when you are putting a meal together in a pinch because it’s already together in the fridge.  This salad takes very little planning to have this ready and waiting!

1/4 cup Apple Cider Vinegar 
A couple of drops of liquid Stevia (Liquid is the best!)

1/4 tsp Himalayan salt
2 English Cucumbers (peeled, cut in half and slice)
1/2 Red Onion (thinly sliced)
2 tbsp Dill

That’s it!! Mix together the cucumbers, onion, and dill.  In a separate bowl mix vinegar, stevia and salt.  Pour dressing over the cucumber mixture and refrigerate.  Simple!
